BFR offers fun vintage books that are applicable today, like Quick Freezing and Family Food Gardening by Gordon Morrison.  Many are requesting people buy locally grown food, what is more local than home?  This book from 1948 “explains the basic principles and practices of family food gardening…as it related to quick freezing”.  Safe, nutritious and economical year round returns from the family food garden.

Fruits are great to freeze.  Picked when at the peak of flavor, they are perfect for smoothies, pies, & dessert toppings.  Apples are delicious blanched in slices and use in fruit cups or my favorite apple sauce.  It freezes well and is a perfect pair with pork chops or a swell snack.


Here is my recipe for Apple sauce.

3 to 4 lbs Apples

Lemon Zest and juice to taste

3″ Cinnamon Stick (or ground)

1/4 Cup Brown Sugar (Molasses or Honey)

1/4 Cup White Sugar

1/2 Salt

Directions:  Core and peel apples, quarter and cook with all ingredients and of course you can add, lessen or subtract ingredients, flavor the way you like.  Bring to a boil then simmer 20 to 30 minutes until apples are tender.  Remove lemon zest and cinnamon stick and smash.  Potato masher, blender, or food processor, it all works.  You can still flavor to taste, add honey, sugar or more lemon.  Great served warm or cold.  Freeze!  ~Double or triple the batch.
